Things I Used

Candy Melts
I used Wilton yellow and black candy melts for this design as they melt smoothly and set firm without tempering, this helps them release cleanly from the silicone tray.

If you can’t find pre-coloured melts, you can colour white compound chocolate using an oil-based colouring such as Colour Mill. You can read more in my Candy Melts for Beginners Guide.

Silicone Ice Cube Tray
A silicone ice cube tray is used to create the smooth domed toadstool tops. It works just as well as a specialist mould, making this method simple and accessible using something you may already have at home.

Make sure the tray is clean and completely dry before starting, as this helps the chocolate release cleanly once set.

Mini Cupcakes
I used mini chocolate cupcakes for this design, but any flavour works. Make sure they are fully cooled before assembling.

Buttercream
I use my Basic Buttercream as it is stable and easy to work with. It fills the mould and holds the cupcake securely in place.

If you’d like to match the outside, you can colour the buttercream red. I recommend using my Microwave Method to achieve deeper colours without affecting the texture.

Piping Bags
Used for piping the candy melts and buttercream into the mould.

Small Brush or Spoon
A small brush or spoon is used to spread the candy melts inside the tray, helping to coat the sides evenly and create a smooth finish.

Baking Tray
Placing the silicone tray onto a baking tray makes it much easier to move in and out of the fridge or freezer without spilling.

How to...

Yellow candy melts and silicone ice cube tray ready for making mini bee cupcake domes.

Step 1

Bake your mini cupcakes and leave them to cool completely.

Melt the yellow candy melts over low heat or in short bursts in the microwave, stirring between each burst to prevent overheating.

If the candy melts feel too thick, add a small amount of vegetable shortening and stir until smooth.

Yellow candy melts spooned into each cavity of a silicone ice cube tray to create bee-shaped chocolate shells.

Step 2

Make sure your silicone mould is completely clean and dry before you begin. Any moisture or residue can affect how the candy melts set and release. Place the mould on a flat surface and have your melted candy melts ready.

Candy melts spread around the mould cavities to coat the sides and form smooth yellow domes for mini bee cupcakes.

Step 3

Add a teaspoon of the melted candy melts into each cavity and gently tap the tray on the bench to release any air bubbles. Tilt the tray in different directions so the candy melts coat the sides of the mould evenly. You can also use the back of a spoon to help spread the melts up to the edges. Once fully coated, set the tray aside until the candy melts have hardened.

Step 4

If needed, repeat the same process to add a second layer for strength.

Once fully set, use a small spatula to carefully scrape away any excess chocolate from the edges. This will give the domes a clean, neat finish.

Step 5 - Mini Bee Cupcakes

Step 5

Add a few drops of yellow gel food colouring to the buttercream and stir until the colour is smooth and evenly combined.

Step 6

Add the buttercream to a piping bag fitted with a large round piping tip (1A)

Step 7

Pipe the buttercream into each cavity on top of the hardened candy melts.

Step 8 - Mini Bee Cupcakes

Step 8

Use the back of a spoon to push it right into the edges.

For best results, make sure the mould is fully filled, then level it off with a palette knife. This helps create a solid shape and prevents the chocolate from cracking when released.

Step 9 - Mini Bee Cupcakes

Step 9

Place a mini cupcake upside down on top of the buttercream, pressing gently so it sticks.

I like to add the cupcakes while the buttercream is still soft, as they sit more neatly in the mould than if added later.

Place the mould in the fridge or freezer until the buttercream is firm.

Step 10 - Mini Bee Cupcakes

Step 10

Once firm, gently push the cupcakes from the base of the mould to release them.

For best results and to prevent the candy melts from cracking, start by loosening the edges first. Gently pull the silicone away from the sides all the way around before pushing through.

This can take a little time, but it makes a big difference and helps them release cleanly.

Step 11 - Mini Bee Cupcakes

Step 11

Melt the black candy melts over low heat or in short bursts in the microwave, stirring between each burst to prevent overheating.

If the candy melts feel too thick, add a small amount of vegetable shortening and stir until smooth. Transfer the melted candy melts to a piping bag and snip a small amount from the tip.

Step 12 - Mini Bee Cupcakes

Step 12

Place the cupcakes onto a sheet of parchment paper and pipe black stripes across the yellow domes. The lines don’t need to be perfect, just remember to leave a small space at one end for the bee’s face. Let the lines set.

Step 13 - Mini Bee Cupcakes

Step 13

To add the wings, place a small amount of the yellow melted candy melts onto the point of each heart sprinkle before attaching them to the bee. Hold them in place for a few seconds until the candy melts have set firmly..

Step 14

Add two small black dots for the eyes using the melted black candy melts and a cocktail stick.

Step 15 - Mini Bee Cupcakes

Step 15

Use a small decorating brush and a little pink lustre dust to add soft blush cheeks to each bee.

Step 16 - Mini Bee Cupcakes

Step 16

Press two black sprinkles into the top of each bee to create the antennae. Use an edible black pen to draw a small smile on the face.

Step 17

I added a little white food colour to the eyes with a cocktail stick.

Step 18 - Mini Bee Cupcakes

The Results! Well done.

That’s it, well done! Your mini bee cupcakes are now ready to serve.

Notes & Tips

Candy Melts

Candy melts work best for this design as they set firm and release easily from the mould without needing to be tempered. This makes them much more reliable than regular chocolate.

If the melts feel thick, add a small amount of vegetable shortening to loosen the consistency. Melt in short bursts and stir well between each one to avoid overheating.

Preparing the Tray

Make sure your silicone ice cube tray is clean, dry and free from any grease or residue. This helps the candy melt domes release cleanly once set.

Coating the Mould

Tilt the tray in different directions to coat each cavity fully with candy melts. Make sure the sides are completely covered, as thin spots can crack when removed from the mould.

Setting the Domes

Allow the candy melt domes to fully set before removing them from the tray. If they feel soft or flexible, chill them for a few more minutes before attempting to remove them.

Releasing from the Mould

Gently press or twist the silicone tray to release the domes. If they do not come out easily, chill them again briefly rather than forcing them, as this can cause cracks.

A great tip is to release the edges first by gently pulling the silicone away from the sides before pushing the dome out.

Filling the Domes

Make sure the buttercream completely fills each dome. This helps create a sturdy shape that is much easier to remove from the mould without breaking.

Decorating the Bees

Leave a small space at one end when piping the black stripes so there is room for the bee’s face. The stripes do not need to be perfectly straight. Slight variations help give each bee its own character.

Adding the Wings

Heart sprinkles work particularly well for the wings because they are lightweight and easy to attach. Hold them in place for a few seconds until the candy melts have set firmly.

Final Thoughts on my Bee Cupcakes

These Mini Toadstool Cupcakes are one of those designs that look really effective but are simple once you get the hang of it. I love how the glossy tops bring them to life.

FAQ:

FAQ: Mini Bee Cupcakes

Can I use regular cupcakes instead of mini cupcakes?

Yes, but you will need a larger mould to create bigger bee bodies. The technique remains exactly the same.

Can I use buttercream instead of candy melts?

Yes. I have made similar bee cupcakes using buttercream, but I prefer candy melts for this design as they create a smoother and more durable finish.

How far in advance can I make them?

The candy melt domes can be made several days in advance and stored in an airtight container. For the freshest results, assemble the cupcakes on the day of serving or the day before.

What cupcake flavours work best?

Vanilla and chocolate cupcakes both work beautifully with this design, but you can use any flavour you enjoy.

Can I use different colours?

Absolutely. This technique can be adapted to create all sorts of mini animal cupcakes by changing the colours and decorations.
