A Creepy Halloween Treat That’s Easier Than It LOOKS!

Creepy but delicious, these Eyeball Cupcakes are the perfect spooky treat for Halloween! With their gory red veins, bold green iris, and glossy black pupil, they’ll grab everyone’s attention at your Halloween party. The best part? They’re easier to make than they look, thanks to a silicone ice cube mold and a few coloured candy melts.

Design

Each cupcake looks like a giant edible eyeball 👀 with a green iris, black pupil, and squiggly red veins. They’re super effective for Halloween dessert tables and guaranteed to impress both kids and adults.

For the base, I used my chocolate cupcake recipe (any flavour works, but chocolate is my go-to). Mini cupcakes only need 12-14 minutes in the oven. For this design you’ll need four candy melt colours — black, green, red, and white. Follow my Candy Melts guide for the best results. You can also use oil based colours to tint white chocolate melts.

The eyeballs are filled with my basic buttercream, which I tinted red for a gory effect. You can actually use any buttercream colour, as it isn’t visible until you take a bite. If you’d like some tips, check out my full guide on how to colour buttercream.

Things I Used to make my Eyeball Cupcakes

  • A Silicone ice cube mold:  This creates the perfect eyeball dome shape. You can buy these at most shops or from amazon.
  • Cupcakes:  I used 12 min chocolate cupcakes, but any flavour works, the decoration is the star of this bake

  • Mini cupcake liners:  I used gold foil liner, but any would look great.
  • Candy melts:  Black, green, red and white. These melt smoothly and set with a clean finish, making them perfect for the eyeball pattern.

  • Vegetable Shortening (Copha): To thin the candy melts for smoother dipping and coating (follow candy melts guide)
  • Buttercream:  ½ batch of my Basic Buttercream Recipe. Used to fill the eyeball.

  • Red gel colouring: Wilton gel colours are my go-to. Gel colours give you strong, vibrant shades without changing the texture of the buttercream. Follow my Microwave Method guide to get the best colours.

  • Piping bags: One for each candy melt colour plus one for the red buttercream. Disposable or reusable bags both work fine.

  • Large round piping tip (Ateco 809) Gives a smooth, even dome of buttercream.

  • Baking tray:  Makes it easier to transfer the mold in and out of the freezer.

  • Small  spoon: To spread and smooth the white candy melts.
  • Cocktail sticks:  Handy for nudging candy melts into place.

  • Small spatula or palette knife:  Useful for levelling buttercream.

Ingredients

  • 12 Mini cupcakes
  • 1 Cup of my basic buttercream
  • Red gel colouring
  • 1/4 Cup candy melts (black)
  • 1/4 Cup candy melts (green)
  • 1/4 Cup candy melts (red)
  • 1/2 Cup candy melts (white)
  • 2 Tbsp Vegetable shortening (if using)

Equipment

  • A 24 hole mini cupcake/ muffin tin
  • 12 Mini cupcake cases
  • A 6 cavity silicone ice cube mold
  • 5 piping bags
  • 1 Extra large round piping tip (Ateco 809)
  • A baking tray or board
  • A small palette knife/ metal spatula
  • A small spoon
  • Cocktail sticks

How to...

Step 1

Bake your mini cupcakes and leave them to cool. Gently melt the coloured candy melts in the microwave on a low heat setting. Once smooth and pourable, transfer them into separate piping bags.

Step 2

Begin by trimming a small portion from the tip of the black candy melts bag. If the opening is too large, the candy may dispense too fast and be harder to manage. Pipe a black dot in the centre of each cavity. The dot should be about 1cm in diameter. You can use a cocktail stick to move the candy into place. Allow the dots to set at room temperature before moving on to the next step.

Step 3

Repeat the same process with the green candy melts. Adding a ring approximately 5mm thick, around the black dot. Again, using the point of a cocktail stick works great to guide the candy into place. Gently tap the tray with your fingertip to level out the melted candy and eliminate air bubbles. Allow to set at room temperature.

Step 4

Move on to the red candy melts and pipe your wiggles. If necessary, reheat the candy melts before using. You can do this by adding the bag to the microwave and heating on low for 30 seconds to a minute. Pipe the lines around the sides of the mold, if its easier, rotate the position of the mold for this part. Let them set at room temperature before moving on to the next step.

Step 5

Make sure the melts have cooled fully but are still workable — any warmth will melt the colours you’ve already piped. I like to add them in two layers: Add about 1 teaspoon of white melts into the mold and tip it in different directions to coat the sides. Let it set.

Step 6

Repeat the process, this time using a spoon to spread the melts right up to the edges of the mold. Place the mold in the fridge or freezer until the candy melts have hardened.

Step 7

Add a few drops of red gel colour to a bowl of basic buttercream. Mix it using a rubber spatula until the colour is evenly distributed. A small amount of food gel is usually sufficient to achieve a noticeable red hue, so introduce the gel gradually. Note that the colour may intensify as it sits, so adding less initially is recommended when colouring buttercream.

Step 8

Add the red buttercream to a piping bag fitted with a large round piping tip (ateco 809) Pipe the buttercream into the mold on top of the hardened candy melts. Use the back of a spoon or a small metal spatula to smooth it out.

Step 9

Place a mini cupcake upside down on top of the buttercream, pressing gently so it sticks. I like to add the cupcakes at this stage, while the buttercream is still soft — this way they sit perfectly in the mold and look neater than if you added them later. Place the mold in the fridge or freezer until the buttercream is firm.

Step 10

Once firm, push the cupcakes out of the mold to reveal the creepy eyeball design. For the best results and to prevent the candy melts from cracking, carefully release the pressure around the edges of the mold first. This can be a little time-consuming, but it makes a huge difference. Once you feel the edge loosened all the way around, push the mold gently from underneath to pop out the eyeball.

Well done!  You’ve just made your very own batch of creepy Eyeball Cupcakes. Each one looks like a gory, realistic eyeball — but tastes absolutely delicious. These cupcakes are guaranteed to be the centrepiece of any Halloween spread, and you can proudly say you created them yourself.

Notes & Tips

  • Let the candy melts set fully at room temperature before moving to the next colour.

  • You can buy just white candy melts and use oil colours to colour them

  • To get a vibrant red buttercream, follow my Buttercream Colouring Guide.

  • You can swap the eye colour — try blue or brown irises.

  • Store in the fridge if making ahead, but bring to room temperature before serving ( if you live in a hot climate, keep them chilled)

FAQ: Eyeball Cupcakes

Can I use regular cupcakes instead of mini?
You’ll need a much larger mold — mini cupcakes fit best for this design.

Can I use buttercream instead of candy melts?
The candy melts give a smoother, more solid finish. I have made the same design with buttercream.

How far in advance can I make them?
The candy melt centres can be made a day or two ahead. Assemble the cupcakes the day or day before serving for best results.

What cupcake flavours work best?
Classic vanilla or chocolate are great neutral bases that let the design shine.
