A fun gingerbread man flip hack that turns into the cutest Turkey Cookie

These Turkey Cookies start with the cutest little hack. Flip a gingerbread man upside down and suddenly it becomes a turkey. A lot of my ideas just pop into my head and honestly, until I actually make them, I’m not sure how well they will work. This one turned out even better than I imagined. Add a crumb coated buttercream body and some colourful candy melt feathers and you’ve got the sweetest and easiest Thanksgiving treat.

The Design

For this design I started with the classic upside down gingerbread man idea. I originally tried piping the feathers with royal icing but the look wasn’t quite what I was imagining. Switching to candy melts made such a difference. The swipe technique creates the prettiest, colourful feathers in seconds and it makes each turkey look a little bit different.

I used my homemade gingerbread men here but this design works perfectly with store bought cookies. I’ll be uploading my no spread gingerbread recipe soon but any gingerbread man cookie works for this design.

Things I Used

Gingerbread men: I used homemade gingerbread, but store bought ones work perfectly too.

Chocolate buttercream: Any smooth, pipeable buttercream works for the body. I used my Basic Buttercream Recipe and turned it chocolatey with cocoa powder.

Biscoff biscuits: Crushed into fine crumbs for that textured turkey body.

Candy melts: Red, orange and yellow. I coloured mine with Colour Mill oil blend for the feathers.

Piping bags: Four small piping bags for buttercream and melted chocolate.

Piping tip:  A large round tip to pipe the head and body.

Candy eyes: Any small edible eyes work here.

Mini orange M&Ms: These make perfect little beaks.

Bowl and spoon: For mixing and dipping the candy melts.

Baking tray & parchment paper: For setting the feathers in the fridge.

Food processor (or rolling pin): To crush the Biscoff biscuits into fine crumbs.

Ingredients

  • 12 Gingerbread cookies
  • 1 Cup chocolate buttercream.
  • 1 Cup candy melts (red)
  • 1 Cup candy melts (orange)
  • 1 Cup candy melts (Yellow)
  • 6 biscoff biscuits (crushed)
  • 24 Candy eyes
  • 12 Mini orange M&Ms

Equipment

  • 4 Piping bag
  • An large round piping tip (2A)
  • A baking tray/ board (sized for the fridge)
  • A sheet of parchment paper
  • Bowl and spoon
  • Tweezers

How to...

Step 1

Place your gingerbread men on a baking sheet. You can use homemade gingerbread or store bought for a quick shortcut.

Step 2

Turn each cookie upside down. This is the simple little hack that instantly transforms a gingerbread man into a turkey shape.

Step 3

Use a food processor to blend the Biscoff biscuits into fine crumbs, or place them in a ziplock bag and crush with a rolling pin. Pour the crumbs into a bowl.

Step 4

Make a batch of my Chocolate Basic Buttercream. You won’t need a full batch for this design, about 1 cup will do. Transfer the buttercream to a piping bag fitted with an large round tip (2A).

Step 5

Pipe one small dot of chocolate buttercream for the head and one slightly larger dot underneath for the body. You don’t need much as the buttercream will spread when pressed into the crumbs.

Step 6

Press the buttercream straight down into a bowl of crushed Biscoff crumbs to coat the entire piped area. Lift up and gently tap off any loose crumbs. Be gentle, only want to coat the buttercream and keep the shape.

White chocolate melts, Colour Mill coloring bottles, and piping bags filled with coloured melted chocolate.

Step 7

Melt your white candy melts in the microwave using short bursts, stirring until smooth. Divide the melted chocolate into three bowls and tint each one with a different Colour Mill shade (yellow, orange, and red). Transfer each colour into a small piping bag and snip a tiny opening from the tip, this will make it easy to pipe the dots.

Step 8

Line a tray with baking paper and pipe a small blob of melted red candy melts onto baking paper, then use the back of a teaspoon to swipe it outward into a smooth feather shape. Repeat this in rows, making plenty of each colour so you can choose the best ones later.

Step 9

Repeat with the orange candy melts, I used two of each colour for every cookie but i recommend piping extra, just incase.

Finish with the yellow candy melts and then let the feathers set completely (you can pop the tray into the fridge for a a while if needed).

Step 11

Use six candy melt feathers (two of each colour, or whatever mix you prefer). Gently push each one into the buttercream around the top of the cookie to form the turkey’s tail. Use a sharp knife to trim them to size. The feathers will stay in place once the buttercream sets, but you can add a little chocolate to the back of each feather if you need to.

Step 12

Use tweezers to place two candy eyeballs onto the buttercream, add a little cocolate to the back of each one first, so they stick in place. Add an orange mini M&M just underneath for the beak

Reheat the piping bag containing the red candy melts and pipe a small wattle onto each cookie.

Your gingerbread turkey cookies are done and HOW CUTE are they?!
The feather colours pop, the cookie body looks perfectly textured, and those silly little eyes give each turkey its own personality.

Notes & Tips

Store-bought is totally fine!
You can use pre-made gingerbread cookies and store-bought buttercream if you’re short on time. Just make sure the cookie surface is firm so the feathers sit nicely.

No piping bags? No stress.
A small spoon works perfectly to scoop and swipe the melted chocolate into feather shapes. The little imperfections actually make them cuter.

Feather options:
If you don’t want to use candy melts, you can make the feathers from fondant, royal icing, or even modelling chocolate. Candy melts are quick and give a smooth swipe effect but if you prefer fondant then go for it.

Trim if needed:
Once the feathers set, you can use a small knife to neaten the edges before pushing them into the buttercream.

Colouring tip:
Only use oil-based colours like Colour Mill when working with chocolate, any other will seize the chocolate and ruin it.

Let everything cool:
Make sure your buttercream is soft when adding the feathers, then they will push in easily without breaking.

Make ahead:
Feathers can be made days in advance. Store them flat in an airtight container.

FAQ: Turkey Cookies

Can I use store-bought cookies instead of baking gingerbread?
Yes! Any firm, flat cookie works, gingerbread, sugar cookies, or shortbread. Just make sure the surface is smooth so the buttercream and crumbs stick well.

Do I have to use candy melts for the feathers?
No. You can use royal icing, fondant, or buttercream, but the candy melt feathers give the cleanest swipe effect and set firm, which makes them the easiest to attach.

How far in advance can I make the feathers?
Up to 1 week ahead. Store flat between baking paper in an airtight container at room temperature.

Will the feathers break easily?
They’re sturdier than they look. Just make sure they’re fully set before peeling them off the paper. If one snaps, you can trim the end and still use it.

Can I use a spoon instead of a piping bag for the candy melts?
Absolutely. Piping bags are easier and neater, but a spoon works perfectly too.

Can I use store-bought buttercream?
Yes! Any ready-made frosting works. Just make sure it’s firm enough to hold the cookie crumbs and secure the feathers.

How should I store the finished cookies?
Store them in an airtight container in the fridge. Because of the buttercream, they’re best eaten within 2–3 days.

Are these similar to your Turkey Cupcakes?
Yes! These are the cookie version of the same idea! If you’re making both, they look great together on a Thanksgiving dessert table.

Final Thoughts

These Turkey Cookies turned out even cuter than I imagined. That simple upside down gingerbread man hack works so perfectly, and once you add the crumb coated buttercream and colourful feather swipes they really come to life. They’re quick, fun and such an easy little project for Thanksgiving.
