BBQ Cupcakes

Turn cupcakes into miniature edible BBQs.

Lay the kebabs across the chocolate grill to finish.

These BBQ cupcakes are one of my favourite summer cupcake designs. I actually first made a version of them years ago using cake pop sticks for the legs and a regular cupcake on top. While the design looked great, the exposed cake could dry out if it was left sitting out for too long, and of course you couldn’t eat the legs.

This updated version solves that problem by using an edible chocolate wrapper to create the barbecue bowl. The cupcake sits inside the chocolate shell, helping to protect it while also making the design much more realistic.

The legs are made from Pocky sticks, the flames are piped using colourful buttercream and a simple chocolate grill completes the look. Best of all, almost the entire design is edible.

They’re perfect for Father’s Day, summer parties, cookouts and BBQ-themed celebrations.

Things Used

Cupcakes

I used regular cupcakes for this design. Any flavour will work, but I used my Chocolate Cupcake Recipe. The cupcake sits inside the edible wrapper, making it easy to customise the flavour to suit any occasion.

Candy Melts

I used candy melts to coat the cupcake liners and create the edible BBQ bowls. Candy melts work best because they set firm, hold their shape well and release easily from the liners without needing to be tempered.

If you’re new to working with candy melts, see my Working with Candy Melts Guide.

Buttercream

I used buttercream to create the flames in the centre of the BBQ. The colourful flames help bring the design to life and add a fun finishing touch. You’ll only need around 1 to 2 cups of buttercream for this design, making it a great project for using up leftover buttercream.

For the buttercream, see my Basic Buttercream Recipe.

Gel Colours

I coloured my buttercream using red, orange and yellow gel food colours to create the flame effect. I love the Wilton gel colours and use them all the time for my buttercream.

If you’d like to learn more about colouring buttercream, see my How to Colour Buttercream guide. For the multicoloured effect used in this design, follow my Rainbow Buttercream Tutorial.

Regular Cupcake Liners

The cupcake liners act as the mould for the edible BBQ bowls. Once the candy melts have set, the liner can be peeled away to reveal the chocolate shell.

Cupcake Pan

Placing the liners into a cupcake pan helps them keep their shape while the candy melts set.

Pocky Sticks

I used Pocky sticks for the BBQ legs. They’re sturdy enough to support the cupcake while keeping the design almost entirely edible.

When I first created this design years ago, I used cake pop sticks for the legs. Switching to Pocky sticks allowed me to make much more of the design edible.

Haribo Gummies

I used chopped Haribo gummies to create the BBQ kebabs. The bright colours help them look like miniature pieces of food cooking on the grill.

Toothpicks

Toothpicks are used as the skewers for the gummy kebabs. Simply thread the chopped gummies onto the toothpicks before placing them onto the grill.

Piping Tip 352

I used piping tip 352 to pipe the buttercream flames. The shape of the tip helps create pointed flames and adds movement to the design.

How the Design Evolved

I first created these BBQ cupcakes several years ago using cake pop sticks for the legs and a regular cupcake on top. While they looked great, the exposed cake could dry out if left out for too long. This updated version uses an edible chocolate wrapper and Pocky stick legs, making almost the entire design edible.

  • A 12 hole cupcake pan
  • A baking tray/ board (sized for the fridge)
  • A sheet of parchment paper
  • A small decorating brush
  • Small microwave safe bowl
  • 2 Piping bags

How to...

Bowls of melted chocolate, chocolate melts, and vegetable shortening on a marble surface, showing how to thin chocolate for dipping sugar cones

Step 1

Melt the cocoacandy melts using short bursts in the microwave, stirring well between each burst to prevent overheating. Once smooth, colour the melts using oil-based colouring.

If the candy melts feel too thick, add a small amount of vegetable shortening and stir until smooth and pourable. This helps thin the melts and makes them much easier to brush inside the cupcake liners.

Step 2

Working on one baking cup at a time, pour around 1 tablespoon of the melted candy melts into the bottom of the baking liner.

Step 3

Use the back of a spoon to spread the melted candy melts over up the sides of the cupcake liner. Let the first layer set and don’t worry if there is small gaps for now.

Step 4

Add a second coat of melted candy melts and continue spreading until the liner is fully coated.

Step 5

Place the coated liners into a cupcake pan and leave them to set completely before adding the cupcakes.

Step 6

Once the candy melts have set, place a cupcake inside the edible wrapper. If needed, trim the cupcake slightly so it fits snugly inside.

Step 8

Add extra melted candy melts around the edge of the cupcake to fill any gaps between the cupcake and the edible wrapper. This helps secure the cupcake in place and prevents the chocolate from cracking around the top edge.

Step 9

Transfer the cupcakes to the fridge and leave them until the candy melts are completely firm. Carefully peel away the paper liner to reveal the edible chocolate wrapper.

Step 10

Turn the cupcake upside down onto a sheet of parchment paper. The edible chocolate wrapper should now look like this. If you notice any small gaps or cracks, you can patch them with a little extra melted candy melts.

Transfer the remaining candy melts to a piping bag and cut a small hole in the end. Pipe a small amount of melted candy melts onto the base of the chocolate wrapper.

Step 12

Pipe a small amount of melted candy melts onto the base of the cupcake. Push the cut end of a trimmed Pocky stick into the candy melts and hold it in place until set. Position the stick at a slight angle to create one of the BBQ legs.

Step 13

Repeat the process with the remaining two trimmed Pocky sticks. Hold each one in place until the candy melts set so the legs stay secure.

Step 14

Allow the candy melts to set completely before turning the BBQ the right way up. This helps keep the legs secure and prevents them from shifting or breaking.

Step 15

Stand the BBQ upright and check that it sits level. If needed, carefully trim the ends of the Pocky sticks until all three legs are even and the BBQ stands securely.

Step 21

To make the kebabs, chop the gummy bears into pieces and thread them onto cocktail sticks. Once the pieces are in place, use scissors to trim off the sharp ends of the sticks. Lay the kebabs across the chocolate grill to finish.

Notes & Tips

Frequently Asked Questions

Can I use regular chocolate instead of candy melts?
Yes, but the chocolate will need to be properly tempered. I prefer candy melts because they are easier to work with and set firm without tempering.

Can I make these in advance?
Yes. The chocolate shells, legs and grills can all be made ahead of time. For the freshest result, I recommend assembling the cupcakes on the day they will be served.

Do I have to use Pocky sticks?
No. You can use cake pop sticks or other edible biscuit sticks. I prefer Pocky sticks because they make almost the entire design edible.

Can I use a different piping tip for the flames?
Yes. I used piping tip 352, but other leaf tips will work too. The exact shape of the flames may vary slightly.

What flavour cupcakes work best?
Any flavour will work. I used chocolate cupcakes, but vanilla, caramel or red velvet would all be great options.

Can I use different toppings on the grill?
Absolutely. I used gummy kebabs, but mini jelly beans work well as sausages. You can also make burgers, steaks or other BBQ foods using fondant.

Why did my chocolate shell crack?
This usually happens if the coating is too thin or if there are gaps around the edge of the cupcake. Adding extra candy melts around the cupcake helps strengthen the shell.

Why won’t my BBQ stand upright?
Check that all three Pocky legs are the same length. If needed, carefully trim the ends until the BBQ sits level.

Can I make these without the kebabs?
Yes. The BBQ cupcakes look great with just the flames and grill if you’d prefer a simpler design.
